Roasted Tomato Salsa
Combine an armful of summer favorites to make this killer salsa. Serve it as an appetizer, side, or topping all week.
Ingredients
2 pints of tomatoes — about 8 heirloom tomatoes or 2 pints of grape
1 white onion or 1/2 bunch of green onions
Peppers — select your preferred heat level:
Mild: 1 green bell pepper
Medium: 1 jalapeno, with seeds and ribbing removed
Hot: 1 jalapeno, including seeds and ribbing
4 cloves of garlic
Juice of 2 limes
1 tsp salt
+/- Cilantro (1/2 to 1 cup, depending on preference)
+/- Cumin (1/4 -1/2 tsp, depending on preference)
Directions
Fine dice tomatoes, onion, peppers, and garlic (or pulse in a food processor until you reach desired consistency)
Mix in lime juice cilantro and cumin (if desired) and adjust seasoning to taste.
