Roasted Tomato Salsa

Combine an armful of summer favorites to make this killer salsa. Serve it as an appetizer, side, or topping all week.


Ingredients

  • 2 pints of tomatoes — about 8 heirloom tomatoes or 2 pints of grape

  • 1 white onion or 1/2 bunch of green onions

  • Peppers — select your preferred heat level:

    • Mild: 1 green bell pepper

    • Medium: 1 jalapeno, with seeds and ribbing removed

    • Hot: 1 jalapeno, including seeds and ribbing

  • 4 cloves of garlic

  • Juice of 2 limes

  • 1 tsp salt

  • +/- Cilantro (1/2 to 1 cup, depending on preference)

  • +/- Cumin (1/4 -1/2 tsp, depending on preference)

 

Directions

  1. Fine dice tomatoes, onion, peppers, and garlic (or pulse in a food processor until you reach desired consistency)

  2. Mix in lime juice cilantro and cumin (if desired) and adjust seasoning to taste.
