Herb & Greens Pesto

This is our favorite way to utilize herbs and greens. Use these pestos on pastas, salads, pizzas, mixed with butter or olive oil as a spread… the sky is the limit for adding flavor to your meals.


Ingredients

  • 1 cup of herbs and/or greens; try one or a combination of the following:

    • Basil

    • Garlic scapes (omit garlic later in recipe)

    • Chives & blossoms

    • Dandelion greens

    • Baby kale

    • Spinach

  • 1 cup roasted nuts or seeds

    • Pine nuts (classic choice)

    • Walnuts

    • Pumpkin seeds

    • Almonds

  • 3 cloves of garlic, peeled

  • 1/3 cup olive oil

  • 1 Tbsp lemon zest

  • 1/4 cup freshly squeezed lemon juice

  • Salt and pepper, to taste

Directions

  1. Add herbs/greens, nuts/seeds, and garlic to food processor and pulse until diced

  2. Add zest, lemon juice, salt, and pepper, then pulse to mix

  3. While processor is on, slowly add olive oil until pesto is smooth and desired consistency. Use more for a thin pesto and less for a thick spread.
