Lemon Mint Iced Tea

Harness the power of the sun to make this health-promoting refreshment over the summer.


Ingredients

  • Lemon balm (one bunch)

  • 1 - 2 lemon slices

  • [Optional] Peppermint or green tea (loose or bag)

  1. Rinse lemon balm

  2. Add lemon balm, lemon slice(s), +/- tea to a clear jar or small pitcher

  3. Add 2-4 cups of hot water and add a loose lid (be sure that steam can escape)

  4. Place in a sunny spot to steep for a couple of hours

  5. Strain and serve over ice, refrigerating extra

  • For express results, add boiling water and let steep for 10 minutes, then strain and refrigerate for 30 minutes; serve over a large glass full of ice.

  • For extra fragrance, muddle leaves prior to steeping — this will release more of the plant’s natural oils and flavor.
