Protein Power Scramble

Adapt this recipe to use whatever veg you have available, choose your protein (eggs, egg whites, or tofu), and top with chives for an elegant instant meal that takes 5 minutes start to finish.

Serves 1


Ingredients

  • Protein (select one)

    • 1/2-1 cup egg whites

    • 3 large eggs

    • 4-6 oz tofu (select an extra firm silken or regular firm variety for the best texture)

  • Seasoning

    • 1 clove garlic, diced (or 1/4 tsp garlic powder)

    • 1 tsp chopped parsley (if you don’t have any, try another fresh herb—cilantro or oregano are great choices—or 1/4 tsp of a dry version)

    • Salt and pepper to taste

  • 1/2 cup greens (select one or mix-and-match)

    • Zesty microgreen mix

    • Spinach or baby kale (shredded or roughly chopped)

  • Cheese (optional)

  • 1 Tbsp chives, diced

  1. Select a medium size pan and warm over medium heat

  2. Add small amount of butter, cooking spray, or coconut oil to prevent sticking

  3. Scramble selected protein with seasoning and add to hot pan

  4. Cook by stirring until almost cooked through

  5. Add greens +/- cheese to pan and stir until fully cooked

  6. Plate to serve and sprinkle chives over top; if you have chive blossoms, arrange on top for an added touch

  7. Serve with warm toast for a complete meal
