Oven Roasted Radishes
Radishes have a reputation for their peppery zing, but roasting them highlights their sweetness, too. These healthy veggies are a great low-carb side that require just a couple minutes and basic staples to prep.
Eat them on their own, or add to hearty salads for added depth.
You can also substitute almost any root veggie in this recipe! Beets, carrots, turnips, parsnips, and potatoes all do well prepared the same way!
Ingredients
2 bunches of radishes
3 gloves garlic
2 Tbsp fresh herbs (chives, parsley, or cilantro)
1-2 Tbsp oil of choice (extra virgin olive oil, butter, coconut oil, or other—you can’t go wrong here)
Directions
Preheat oven to 425 degrees Fahrenheit
Remove greens and rinse radishes well
Cut in half (cut from top to bottom) and pat dry
Toss with oil and season to taste with salt and pepper
Spread over baking sheet in single layer (make sure they aren’t packed on — air around each piece will ensure an even roast)
Roast for 12 minutes, stir / turn, and return to oven for additional 12 minutes
Add garlic and fresh herbs, toss one more time, and roast additional 4-5 minutes
Serve as-is (yum!) or mix with fresh avocado for a heart-healthy side.
